Egg curry recipe: A great and quick dish to make at home

This recipe is especially useful when there is less time or sudden guests come. Egg curry is a dish that goes well with rice, roti, paratha – everything.
Ingredients to make Egg Curry:
For boiling eggs:
1. Eggs – 4
2. Water – as required
3. Salt – a little (helps in boiling)
For making curry:
1. White oil – 3 tbsp
2. Onion – 2 (finely chopped)
3. Garlic – 5 cloves (crushed)
4. Ginger – 1 tbsp (crushed)
5. Tomato – 2 medium size (ground)
6. Turmeric powder – 1 tsp
7. Red chilli powder – 1/2 tsp (you can add as per your requirement)
8. Coriander powder – 1 tsp
9. Cumin powder – 1/2 tsp
10. Garam masala – 1/2 tsp
11. Salt – as per taste
12. Water – as required
13. Coriander leaves – for garnishing
Method to make Egg Curry (Step-by-Step):
Boil and prepare the eggs:
1. First, wash the eggs well.
2. Add water and some salt and boil the eggs for about 10 minutes.
3. Remove the shell of the eggs by putting them in cold water.
4. Cut the eggs lightly so that the spices penetrate well inside.
Frying the eggs:
Heat some oil in a pan and lightly fry the eggs. This makes the outside of the egg crispy and adds a good taste to the curry.
Preparing the spices:
1. Heat oil in a pan and add cumin seeds.
2. When the cumin seeds start crackling, add onions and fry till they turn golden.
3. Now add ginger-garlic paste.
4. When the raw smell goes away, add tomatoes, turmeric, chilli, coriander, cumin powder and salt.
5. Sprinkle water little by little in between and keep stirring the curry with a fork so that the spices do not stick to the pan.
6. When the tomatoes melt completely and the spices start leaving oil, then understand that the masala is ready.
Adding eggs to the curry:
1. Now add fried eggs to it.
2. Mix well with the spices.
3. Stir well for 2-3 minutes so that the spices mix well with the eggs.
Last step:
1. Now add about 150 ml of water to it.
2. Let it cook for some time so that the gravy becomes a little thick.
3. After that add garam masala over it and sprinkle coriander leaves on top.
Some suggestions and variations:
1. If you like spicy, then you can add chopped green chillies.
2. Sprinkle some chaat masala on the eggs – it will enhance the taste.
3. If you want restaurant-like taste, then add some garam masala while frying the eggs.
Best way to serve:
Serve egg curry with hot basmati rice or ghee rice. It also goes well with roti, paratha or luchi. Accompanying it with cold yogurt or a raw salad makes the meal even healthier.
